Grilled Lime Margaritas

WERO kitchen came through for Taco Gear again with this killer Margarita recipe. Do your friends (more importantly, yourself) a favor and make these! They are delicious. Grilling the limes before you juice them adds an extra layer of flavor to the margaritas that I really enjoy. Both the juice and the cilantro simple syrup can be made a few days ahead and kept in the fridge until ready for use.

Ingredients

(yields 4-6 margaritas)

  • 8-10 limes (you will need about a cup of lime juice)
  • 1 cup sugar
  • 4 cups water
  • 1 bunch cilantro
  • 1 shot tequila (or two, who’s counting?)
  • key lime to garnish
  • salt for rim

Instructions:

1) Make cilantro simple syrup 

In a small pot heat 1 cup of sugar with 4 cups of water, stirring occasionally until sugar is completely dissolved. Once sugar is dissolved, remove pot from heat. Cut the stems from one bunch of cilantro (reserve the leaves for garnish later) and add them to the pot. Let steep for about 30 minutes, strain and refrigerate.

2) Grill limes

Heat the grill. While it’s heating up cut the limes in half. Place the limes cut side down on the grill and cook undisturbed until slightly charred (about 3-5 minutes). Remove limes from grill and let cool.

3) Juice limes

Once the limes are cool, juice and pour through a strainer to catch the larger bits of pulp (some pulp is ok). Refrigerate.

4) Assemble

Rub one key lime wedge around the rim of the glass and dip in salt. Add about 2/3 cup of the cilantro simple syrup, 1/8th cup of the grilled lime juice, ice, and a shot of tequila. Garnish with cilantro sprig and key lime if desired.
